그라인더계의 다크호스라면 ek43 을 꼽는게 대세로 보입니다만, 여타 다른 브랜드에서도 흥미로운 접근으로 그라인딩 과학에 대한 접근과 신제품을 개발하는 것은 당연한 일일지도 모르겠습니다.

누오바 시모넬리와 공동작업을 해오던 아일랜드 챔피언 경력의 콜린 하몬드(3FE 소속) 은 작년 말 누오바 시모넬리와의 공동 작업 끝에 제작된 시모넬리의 그라인더 Clima PRO 에 대한 글을 포스팅 한 적이 있었습니다. (http://colinharmon.wordpress.com/2013/10/14/the-grinder-era) 사실상 특정 그라인더에 대한 호불호에 대한 견해라기 보다는 더딘 그라인딩 관련 기술 발전에 대한 성토성의 의견이 절반, 바쁜 샵에서의 샷 일관성에 대한 견해가 절반쯤 되는 글이었죠.(물론 결과적으로는 그라인더의 만족감을 표현하는게 당연합니다만..)


Look at it this way. You’re grinder grinds coffee at 16°c and when you hit brew the water temp is 93°c. In reality it probably takes about 15 seconds before everything inside your portafilter is 93°c. Thats not necessarily a bad thing, it’s just the reality.

Now consider that grinders I’ve used in the past have spat out coffee at closer to 60°c when its busy. Once its dosed and the brew button is pushed, we’re looking at something closer to 8 seconds before everything in the portafilter is at 93°c. Again, not necessarily bad, just different.

This temperature jump makes our insistence on temperature stable espresso machines seem laughable when the grinders are giving us one hoot of a problem to deal with when it comes to variance. Whats 1° in the water temp when your ground coffee is giving you 45°c jumps?

What this grinder is doing for us is maintaining the coffee temperature at about 35°c to 50°c and as a consequence the taste of the espresso throughout the day is far better for it. I usually taste an espresso at the end of the lunch rush as this is when our equipment is hottest and the machines are at their dirtiest. This gives me a good indication of the espressos lowest ebb all day. I’ve never had better espresso at 3fe at this time as I do now, and  this for me is the biggest victory.

예를 들어 머신은 화씨 1씨의 변화도 놓치지 않기 위해 노력은 해왔지만, 왜 본질적인 원두가 지닌 초기 온도에 대해서는 고려되지 않는가? 가 가장 주된 논점이기도 했습니다. 

기존까지 발열을 제한하기 위해 총력을 기울여왔던 기술접근과는 달리 일정하게 그라인더의 온도를 유지하는데 더욱 초점을 맞춘 접근이기도 합니다. (이 부분은 분쇄 원두가 갖는 초기 온도가 머신이 유지하고 있는 추출 온도에 도달하기 까지의  전체 열용량과 관련이 되는 부분이며 일반적인 상황에서는 콜린 하몬드의 주장이 타당한 부분이 많습니다.)

여튼 이렇게 3FE 의 주력 그라인더로 자리잡은 Clima Pro 와 더불어 콜린 하먼드 역시 그라인딩 세미나를 실시합니다.(제임스 호프만 이후로 콜라보레이션 작업은 시모넬리의 가장 큰 강점이기도 합니다만, 이젠 말코닉도 맷 퍼거 효과를 산레모도 존 고든 효과를 염두한 마케팅에 열심인 모습이죠). 카운터 컬쳐의 교육 커리큘럼에 콜린 하먼드의 그라인딩 테크닉 내용이 간략이 소개된 부분이 있어 발췌해봅니다.

Colin spoke eloquently about the Nuova Simonelli Mythos One/Clima Pro technology, going into detail about common problems with grinders—noise, dose consistency, temperature, waste, maintenance, workflow/speed, aesthetics, and more—and how the Mythos One solves for them. Colin cautioned against “pocket science,” i.e. word-of-mouth theories that get passed around the industry that have no basis in science, such as the myth that if coffee gets too hot in the grinder, it won’t grind as fine. “Does coffee get coarser the busier your shop gets?” he asked, then explained that no, hot coffee behavescoarser—water goes quickly through it because hot coffee offers less resistance than cold coffee. He drew the analogy of solid, cold butter versus liquid, hot butter.

콜린은 기본적으로 기존 그라인더이 가진 문제점 소음, 도징 안정성, 온도, 낭비, 유지보수, 워크 플로우와 속도, 미학적 관점 등에 대한 언급과 함께 Clima Pro 가 어떻게 그러한 부분을 개선했는지에 대한 내용을 설명했다. 콜린은 일명 "주머니 과학" 에 대한 주의를 요했는데, 이는 과학적 접근에 기반하지 않은 떠도는 속설 이론, 예를 들어 커피 원두가 그라인더 내부에서 뜨거워지면 가늘게 갈리지 않는다" 같은 미신들을 의미한다. 

"여러분의 샵의 피크 타임이 될 수록 실제로 커피가 더 굵게 갈립니까?" 라고 질문한 뒤 아니라고 답하며 "뜨거운 커피 입자는 굵은 커피처럼 행동할 뿐이며, 뜨거운 커피는 차가운 커피보다 저항이 약하므로 더 빨리 물이 그 틈을 지나가는 것"이라고 설명했다. 그는 고체 상태인 차가운 버터와 액체상태인 뜨거운 버터의 대조를 통해 설명했다.

역시 외국은 빠르군요 많은 사람들이 추출 온도와 로스팅에 의미를 부여할때 왜 그라인딩에 대한 초점을 맞추지 않을까라는 의문을 갖고만
있었는데 더 노력해야겠다는 생각이 드네요
